Peas and Prosciutto

I love English Peas. They were a regular staple when I was growing up. Several years ago, I was watching Giada on the Food Network and she made this recipe. I didn't stick to it exactly as she made it, but I knew I would like it since it had English Peas in it.

Peas and Prosciutto

4 oz. very thinly sliced prosciutto, diced ( I used smoked deli ham from Wal-Mart.)
2 T. olive oil
1 chopped green onion
salt and pepper
1 (1 lb.) bag frozen peas, thawed
1 garlic clove, minced


Heat the oil in a skillet over medium-low heat. Add the onions, garlic and saute until tender, about 1 minute. Add the peas and saute until heated through, about 5 minutes. Stir in the chopped ham and cook for 1-2 minutes. Remove from the heat. Season to taste with salt and pepper and serve.
