Creamy Southwest Chicken

This is a low carb chicken dish, but it is sure to please everyone.  If you stick with a more low fat diet, you can adjust a few things and it will be just fine for you, too.  I ate it just like this, but my family ate theirs with warmed flour tortillas.  We think it would be great inside chicken enchiladas, as well.  Everyone in my family really liked it.  I used a 2.5 pound bag of frozen chicken breast strips, so did 2 1/2 recipes for our family of six.  I had enough left over for a meal for another person.

Creamy Southwest Chicken (recipe from http://www.lowcarbdiets.about.com/)
1 pound boneless skinless chicken breasts
1/4 cup minced onion
2 cloves minced garlic
One 6 to 8 ounce can chopped green chilies (depending on can size) (*I used only one 6 oz. can even though I did more than one recipe.)
1 teaspoon chicken base (optional)
1/4 cup whipping cream
1/3 cup shredded cheddar or jack cheese
Olive oil
Salt, pepper

Heat large skillet with oil. Cut chicken into bite sized pieces and season with salt and pepper. Saute' until brown on both sides, adding onions about half way through. Add garlic and cook for another minute. If needed, deglaze the pan with a little water or chicken stock. Add 1 teaspoon chicken base if desired. Add green chilies and whipping cream, and simmer until chicken is done and sauce is thickened. Top with cheese, and serve when cheese melts
Optional garnish: avocado slices; cilantro

Makes 3-4 servings

Nutritional Analysis for each of 3 servings: 4.5 grams of effective carbohydrate plus 1.5 grams fiber, 38 grams protein, 18 grams of fat, 347 calories.

Magical Peanut Butter Cookies (Low Carb/Sugar Free)

Posted by Lori:I'm trying to stay off of sugar and flour....at least until our family reunion this coming Saturday :), so I found this recipe for sugar free, no flour cookies.  I really liked them.  My husband didn't.  I'm sure not everyone will, but if you're diabetic or eating low-carb and you can't have sugar, I think you'll like it a lot.  I think there is a version of this using sugar, as well.  It's  quick and easy to prepare. 

This is a Paula Deen recipe.  I got 13 cookies from the recipe.

MAGICAL PEANUT BUTTER COOKIES
1 cup peanut butter, creamy or crunchy (one review said natural peanut butter could be used, as well)
1 1/3 cups baking sugar replacement (recommended: Splenda)
1 egg
1 teaspoon vanilla extract (I used two)

Preheat the oven to 350 degrees F. Grease a large baking sheet.

In a mixing bowl, combine the peanut butter, 1 cup sugar replacement, the egg, and vanilla, and stir well with a spoon. Roll the dough into balls the size of walnuts. Place the balls on the prepared baking sheet. With a fork, dipped in sugar replacement to prevent sticking, (if you put the fork in the dough a little first, the Splenda will stick to it, then do the crisscross) press a crisscross design on each cookie. Bake for 12 minutes, remove from the oven, and sprinkle the cookies with some of the remaining sugar replacement (I didn't do this). Cool slightly before removing from pan.

Pickle - Ham Spirals

These make great little appetizers or snacks for yourself and your family. To make it a low-carb recipe use regular cream cheese or if you would rather have low fat, use the light or fat free variety.

1 package ham slices
1 jar kosher dill spears, drained
1 8oz package cream cheese, softened

Pat ham and pickles dry with a paper towel. Spread 13 ham slices each with about 1 tablespoon cream cheese or enough to cover the ham slice. Top each slice with 1 pickle & roll up. Refrigerate at least one hour. Slice each pickle roll into 5 to 6 pieces. May secure with a toothpick if desired. Store in refrigerator until ready to serve.
