Mini Pizzas

This recipe isn't anything new to most everyone, but I was just pleased that Larry actually liked this. Since it's been so terribly hot, cooking is not the foremost thing in my mind, especially at night. This hit the spot last night. It was so quick and simple, but tasty at the same time.

Whole grain English muffins
Pizza sauce
Mozzarella cheese
Pepperoni


Slice each muffin in half. Put under the broiler and get the top crisp. They taste better this way. Spread the desired amount of Pizza sauce on top of each muffin half, followed by pepperoni and shredded cheese. Place back in the oven to melt the cheese. This, along with a dinner salad, made for a very good light supper. Pin It Now!
