Sandwich Wrap

If you're trying to cut back on calories or eat healthier, this is a great sandwich to include on your menu. It's so simple, but one of my favorites. I think I could eat it once a day and not get tired of it.

Sandwich Wrap

4 hard boiled eggs
4 tsp. mayonnaise
1 tsp. Dijon mustard
salt and pepper to taste
Whole-wheat wrap bread
Bell pepper, cut into strips
Red onion
Lettuce

Combine the eggs, mayo, mustard, salt and pepper. Spread the egg mixture in the middle of the wrap. Top with the vegetables. Fold into a sandwich wrap.

Very good!!!!

I would never think of that but not a huge fan of boiled eggs. I overheard someone yesterday in the grocery store telling someone they loved scrambled eggs with green chilies and cumin. Sounded good to me, so I picked up a can of green chilies right then!

I love egg salad sandwiches--but I'm picky about them. I found this combination about 5 years ago, and it caught my eye. It really is satisfying. Larry would like green chilies in scrambled eggs, too. Good to hear from you.
