Last week I received the flyer announcing the 2011 Gooseberry Patch Country Friends Christmas book. It had several great recipes just in the flyer - tempting me to purchase the new book. This recipe is one I look forward to trying. It would be great for a brunch!
Mini Spinach and Bacon Quiches
1/4 cup onion, diced
3 slices bacon, crisply cooked and crumbled, drippings reserved
10 ounce package frozen chopped spinach, thawed and drained
1/8 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon nutmeg
15 ounce container ricotta cheese
8 ounce package shredded mozzarella cheese
1 cup grated Parmesan cheese
3 eggs, beaten
In a skillet over medium heat, cook onion in reserved drippings until tender. Add spinach and seasonings; stir over medium heat about 3 minutes or until liquid evaporates. Remove from heat; stir in bacon and cool. Combine cheeses in a large bowl. Add eggs; stir until well blended. Add cooled spinach mixture; stir until well blended. Divide mixture evenly among 12 lightly greased muffin cups. Bake at 350 degrees for 40 minutes or until filling is set. Let stand 10 minutes; run a thin knife around edges to release. Serve warm. Makes 12.
