This recipe came from a blog reader. She sent a few recipes that I look forward to trying and wanted to share with all of you. The first one is for Pancho's Cheese Dip and sounds great!
PANCHO'S CHEESE DIP
1 pound Velvetta
1 can mild Ro-Tel (tomatoes and green chilies)
1/2 teaspoon garlic powder
1 1/2 teaspoon cumin
Melt cheese and Ro-Tel until smooth in a double boiler or microwave, stirring throughout cooking.
Puree Ro-Tel and cheese in blender or food processor and add cumin and garlic powder. Blend thoroughly and serve.

I've never thought about adding more spices to it...may have to try that next time!
